Quarantine Meals – Easy Weeknight Meals

Today I’m sharing some of the meals we’ve made at our house over the past few weeks! My hope is that you will find inspiration to get in the kitchen and get creative with what you have on hand!

Smoked Chicken Flatbreads
Joseph’s Lavash Bread – I find them at Publix in the deli section
Raos Marinara
Smoked Chicken – we bought a pound of smoked chicken from a local favorite BBQ spot, Full Moon BBQ!
Sun-dried Tomatoes
Spinach
Goat Cheese
Mozarella

You can use ANY toppings you desire!

Preheat oven to 450ºF
Lay Lavash Bread on a cookie sheet and spray with cooking spray (preferably olive oil spray)
Toast just the bread for 2 minutes
Remove from oven and add all toppings
Return to oven and cook for 7-8 minutes or until cheese is melted and edges begin to crisp up

I served the flatbreads with a chopped side salad using a variety of veggies I had in my fridge.

Burrito Bowls with Grilled Chicken
Organic Brown Rice – Trader Joe’s Frozen Section
-Follow pkg directions then add cilantro and lime juice once cooked
Black Beans
-Added Cumin
Sautéed peppers and onions
Served with Salsa and Good Foods Avocado Salsa (I find this at Publix or Target)

Mediterranean Meatballs by The Modern Proper (these freeze well!)
Roasted Asparagus

The Defined Dish cookbook is hands down my FAVORITE cookbook I have ever owned! We have made several recipes from the book during quarantine including:

One thing that has really helped me is making a list of every perishable item we have on hand to make sure I use it all/find a way to incorporate those items into meals. That way, I’m only making trips to the grocery store out of absolute necessity. Making a list like this may be something that you already do, and it is DEFINITELY something I’ll continue to do after the quarantine!

We have tried to find ways to support local businesses and restaurants every few days. Here’s a few things we’ve done:
*Picked up local produce from Stone Hollow Farmstead at their Farmstand
*Bought fish and steak from a local meat company
*Picked up smoked chicken and smoked turkey from a local BBQ restaurant to enjoy throughout the week on salads and sandwiches
*Ordered takeout via curbside pickup from a few local restaurants!
